Finding space to plant more greens

Yesterday Natalie was sharing how to get more greens in your diet, now I will share with you how to find more space to plant some.


We are expecting a storm, it’s 8 am and I am rushing out in the garden to take a few pictures.
Last year I was trying to find a way to produce more greens and make it easier for me to have them handy.  I decided to install planters just in front of our kitchen door on the fence. It allows us to have organic greens easily accessible, I don’t even need to bend to harvest it … A pair of scissors and we have an organic fresh salad! It’s also a way to use the fence as a planting space it gives shade in the summer hot days to these fragile little greens.
We found these planters on ebay for really cheap and it’s made of non treated cedar wood perfect to grow organic foods.
Greens do really well in planters ( even inside for those without a garden and dream of fresh greens ) When I was living in Paris I would grow on my windows mostly greens and herbs it was such a luxury.
You just get potting soil and compost, water well. I would suggest to plant some every 2 weeks to keep on having fresh greens.
You can plant them from organic seeds or get some in your local nursery. It makes it cheaper to plant from seeds and they come up really fast.
My favorites for salads are arugula, spinach, sorrel, red lettuce, mizuna.

how to get more greens into your diet


if you're like me, you have good intentions to get those greens in. that is... until your precious head hits the pillow & you realize you haven't even touched one leafy green. here are a handful of tips to get more greens into your diet. enjoy!


1. prep greens ahead of time. i am often in-between tasks when eating lunch. having pre-washed greens on hand makes me more likely to grab the greens instead of last night's dinner leftovers. my husband or i will usually harvest greens once or twice a week from the garden. we soak the greens in water, strain them, chop them, add them to a reusable container with a lid, & place them in the fridge for easy lunch and dinner prep.

2. mason jar salads. my girlfriend & i were just talking about mason jar salads. they're cute & make lunches-on-the-go fun! they're also easy to prep. here's a fun tutorial on making your mason jar salad. simply add the dressing on the bottom & then layer. 

3. freeze your greens. thicker greens, such as kale & spinach, freeze well. simply wash & chop your greens. add them to cookie sheet & freeze. once your greens are completely frozen, remove them from the cookie sheet & add them to a labeled baggie. frozen greens are perfect in hearty soups!


4. add additional greens to recipes. i love experimenting in the kitchen. even if you're a recipe follower, adding additional vegetables, such as yummy greens, to a meal can make it extra delicious and healthy. i love chopping up wilty greens & adding them to my pasta sauce. 

5. green smoothies. green smoothies are a great option for a healthy breakfast or lunch. my favorite smoothie recipe - 1/2 can of coconut milk, 1 banana, 1 tablespoon almond butter, 1/2 cup frozen mango, 1/2 cup frozen greens (kale is my favorite!), & 1/2 cup frozen strawberries. add & blend until smooth. enjoy in a mason jar with a fun straw!

6. weekly challenges. weekly challenges to change habits are a great way to stay mindful. try a weekly challenge of eating a side salad with your dinner every night for one week. ask the family to join in or a group of friends. it's fun & you're one step closer to a healthier habit!

leafy greens harvest & a recipe



this week we harvested our first bunch of kale & swiss chard of the season! there isn't anything much better than homegrown greens freshly harvested from the garden right after a long winter season.


harvesting fresh vegetables from our garden allows me to get a little more creative in the kitchen & with our meal plan. on tuesday evening, i meal planned a brussels sprouts side dish to accompany our mushroom & tomato stew. with a bounty of leafy greens right outside our door, i decided to add a mix of kale & swiss chard to the sprouts.


 with a pinch of salt, a drizzle of olive oil & a helping of minced garlic, my bit of experimenting in the kitchen turned out delicious. i want to share my recipe with you for a healthy green dish!


leafy greens & brussels sprouts saute
serves 4
 1 1/2 cups brussels sprouts, chopped in half
1 medium yellow onion, diced
1 cup kale, chopped & tightly packed
1 cup swiss chard, chopped & tightly packed
olive oil
salt & pepper to taste

in a cast iron skillet or nonstick pan, drizzle olive oil. allow to warm up just a bit until the oil starts to sizzle. add onions & brussels sprouts. cook on medium high heat for 8 to 10 minutes until brussels sprouts are tender. add swiss chard & kale. cook for an additional 4 minutes or so on medium heat until leaves are slightly wilted. add minced garlic & cook for another minute. salt & pepper to taste.
enjoy as a side dish or with beans as a main dish.
